Martin Gagné

My first memory involving maple was the whole family getting together at my uncle's sugar shack.

I love the flavour of maple.

For me, maple is an essential ingredient in the kitchen.


Martin Gagné is fourth generation Algonquin and so his attachment to the First Nations extends to more than just his cooking. After completing classes at École Le Triolet, he took up a position at Manoir Hovey before becoming Executive Chef at Manoir St-Castin. It was during his time there that he became interested in First Nations cuisine. The dining experience he gave to his customers earned him the 'title' of culinary wizard. Garnering new interest in First Nations cuisine, he is the right man to be at the helm of La Traite restaurant. Since opening in 2008, the restaurant has gained a lot of publicity and recently won the Public prize at the 20th Quebec Food and Beverage Gala.
