My first memory of maple was a visit to an artisanal sugar shack.  I love maple for its unique flavour and versatility, which means it can be used in so many different creations.For me, maple represents springtime.   Biography Born in Cancale, Brittany, Chef Yvan Lebrun rubbed elbows with top toques before settling in Quebec City in 1986. He established his own restaurant in 1990 and has been developing his passion and crafting his image there ever since. At Restaurant Initiale the food is delicious, authentic and simple, and uses local ingredients from the region’s finest artisans. All this passionately prepared and served by staff who understand the art of great dining.
