Martine likes cherries, but loves maple syrup. This chef-owner is constantly finding creative ways to incorporate that liquid gold into the food she serves in her magnificent restaurant: maple tarte Tatin, maple-confit radishes, confit lamb shank with maple and caraway, cream of parsnip soup with a hint of maple and a maple pie. Biography Originally from Belgium and now in the restaurant kitches for 23 years, Martine Satre is a huge proponent of using local produce.
