A top restaurant and a top chef who has always had a soft spot for maple products. You can tell he loves playing with all the possibilities that maple offers. His Indian candy smoked salmon, crystallized maple sap and beurre blanc, and the Kénogami cheese en croûte with maple syrup-toasted hazelnuts are very persuasive.

Merlin Lambert is the man behind everything at this wonderful place. The attractive modern decor complements the sumptuous cuisine. Quebec products are the stars here, as in Thérèse Major’s stew with apple brandy and maple sparkling wine and the rabbit confit samovar with maple cream and pecans. This is the work of a gastronomical wizard whose enchants all of our senses.
